RAW CHOCOLATE MOUSSE RECIPE
This smooth, creamy mousse is insanely delicious… and it also happens to be raw and sweetened naturally. The sweetness comes courtesy of plump Medjool dates – perfect for date night. (We had to.)

2 cups pitted Medjool dates
2 cups almond milk
1 tablespoon chia seeds
8 tablespoons cacao powder
1/4 cup cashew butter
1/2 teaspoon sea salt
1 1/2 teaspoons vanilla extract
Soak the dates and almond milk together in a bowl for 3 hours. Transfer to a high-speed blender and blend on high until creamy. Add in the chia seeds, cocoa powder, cashew butter, salt, and vanilla and blend until well incorporated. Pour into ramekins and top with nuts and berries, or other fruit as desired. Serves 4-6.
